Ingredients:
-salmon
-lemon
-noodles
-red pepper
-red onion
-corn
-edamame
-spinach
-sea salt
-pepper
-Insainly Fit Lemon Garlic Seasoning
-olive oil
-fresh lemon juice
Directions:
Dice red pepper and red onion, combine with all other veggies (corn, edamame, and spinach), and do a quick sauté (1-2 minutes) in a pan with olive oil.
In a pot, boil the noodles until al dente. Drain the water and season with sea salt, pepper, olive oil and fresh lemon juice to taste. Place in a bowl and combine with veggies and stir together. A place to the side.
Season salmon with Insainly Fit Lemon Garlic Seasoning. In a cast iron skillet, drizzle with olive oil and sear both sides of the filet. Place lemon slices on top of the filet and place in the oven on broil on the bottom rack. Remove once fully cooked (Internal temperature of 145 degrees). Plate and serve with a pasta dish.
